Course Leader

Trevor is a Registered Nutritionist specialising in Nutrition Science.

Trevor joined the UCO in 2020 and he has been a lecturer and senior lecturer in nutrition and food science related subjects since 2011. He has previously taught BSc and MSc students studying nutrition and dietetics; human nutrition; food science and nutrition; and sports, exercise and nutrition.

His nutrition science research career started in 2007 and has focused on the physiological effects of phytochemicals from edible plants on healthy populations and those at risk from chronic diseases such as cardiovascular disease. He specialises in human dietary intervention trials investigating the effects of chronic and acute consumption of fruits and vegetables on blood vessel function, blood pressure and real-time in vivo measures of blood flow and arterial stiffness. He also conducted studies to investigate the effects of fruit and vegetable-enriched products on measures of satiety, consumer acceptance and post-processing phytochemical concentrations.

Trevor is currently working in public health nutrition and public engagement with science to promote health and prevent diet-based diseases with the aim of translating the science developed in nutrition laboratories into practice.

When he is not at the UCO, Trevor is a qualified yoga teacher accredited by Yoga Alliance Professionals UK and spends time cultivating his edible garden in Surrey, where he grows over 100 types of edible plants throughout the year. These include unusual food plants such as mashua, oca and yacon; heritage varieties and unusual coloured varieties rarely found in supermarkets.
